The drinks

Vegetable juices

Many are convinced that fruit juices should be consumed regularly, since they are a real storehouse of vitamins, while fresh fruit juices are the lot of athletes and fanatical fans of a healthy lifestyle. This approach is fundamentally wrong, although juices from fruits and vegetables do have a different effect on human health and on the whole.

So, fruit juices really help cleanse the body, help to disperse the metabolism, and also help relieve stress. That is why they are very useful for people who are constantly experiencing emotional and psychological overload. Vegetable juices contain more nutrients, vitamins, macro- and microelements.

Therefore, they help relieve fatigue, restore strength after physical exertion, provide energy.

The use of fresh vegetables can be recommended for people weakened by long-term illnesses, as well as for children and adolescents. In addition, vegetable drinks have an order of magnitude less fructose, and therefore they are allowed even to those who have been diagnosed with diabetes.

Fresh vegetables: drink or not drink

All fresh vegetables can boast excellent chemical composition. In this case, we are talking not only about vitamins, macro- and microelements, but also phytoncides - the so-called "natural antibiotics", which kill bacteria and can help in the treatment of many serious diseases. We should not forget about dietary fiber, which works as a natural scrub for the body, binding and naturally eliminating toxins.

So, only 150 g of freshly squeezed carrot juice contains a daily intake of vitamin A. Fresh fruits made from green vegetables (broccoli, cucumbers, zucchini, savoy cabbage) boast a high chlorophyll content. In its composition, it is identical to one of the blood elements - hemoglobin, and therefore, firstly, it is easily absorbed by the body, and secondly, it is useful for people suffering from anemia. Juices from green vegetables also help cleanse the liver and help prevent cancer.

Tomato juice is a storehouse of lycopene, which effectively slows down the aging of cells and increases the body's resistance. Fresh potato due to its chemical composition will come to the aid of hypertensive patients, as it helps to normalize blood pressure. In cabbage fresh vitamin C is as much as in lemon, so it will be a good help in the cold season, when we are most vulnerable to influenza and SARS.

At the same time, it should be noted that vegetable juices, according to doctors and nutritionists, are characterized by a low content of herbicides even if the vegetables from which they were prepared were grown using a significant amount of chemicals.

The thing is that with the proper preparation of vegetable juice, all toxic substances remain in the so-called "cake" - waste from the production of fresh.

That is why nutritionists emphasize that, in order to be completely confident in the quality of the vegetable fresh, it is better to cook it at home, using vegetables purchased from sellers you trust.

Of course, many people think that you should not complicate your life by spending time on preparing fresh vegetables from vegetables at home. Moreover, the process of making juice, for example, from celery or parsley is lengthy and troublesome. Is the game worth the candle?

We won’t deny that it’s much easier to purchase a package of a drink in a store. However, even an inexperienced person, comparing the taste characteristics of the product purchased at the outlet, with freshly prepared fresh juice, will understand that it is in the literal sense of the word heaven and earth.

Juices produced industrially retain only a fraction of the substances that vegetables received from nature. But "caring" manufacturers generously add preservatives, sugar, flavors, dyes, and other substances to them, which have absolutely nothing to do in juices. They will not bring any benefit to the body, but they can provoke allergic reactions and problems with the gastrointestinal tract.

In addition, in industrial production, no one meticulously studies every carrot or potato, and therefore not only fresh and healthy fruits are used to make juices, but also those that are stale or have begun to deteriorate.

Often, opponents of the use of fresh juices insist that all the same useful substances, vitamins and minerals can be obtained without dancing with a tambourine around the juicer - just eat vegetables for food. Yes, indeed, vegetables should be present in our diet regularly, but the fact of the matter is that a person is simply not able to eat such a quantity of cabbage and carrots in order to get the amount of useful substances that is contained in carrot or cabbage fresh.

Freshly squeezed juices are a vitamin “bomb”, because in a rather small volume, the concentration of nutrients is off scale in the literal sense of the word.

Moreover, juices, unlike vegetables in their “natural” form, are absorbed very quickly by the body, take part in metabolic processes, and help restore the acid-base balance. At the same time, juices do not require energy for a long digestion process, like the vegetables themselves.

How to drink vegetable juices

The high content of nutrients in vegetable juices does not mean at all that they should be drunk in liters at any time of the day. In order to make fresh fruits from vegetables not harmful to the body, it is necessary to remember several rules related to their use.

Drink freshly squeezed juices immediately after preparation. The thing is that the antioxidants and phytonutrients present in the chemical composition of the fresh are volatile substances, so their amount in the finished drink decreases almost every second. And vitamin C is destroyed in contact with air within thirty minutes. The only exception to this rule is beetroot juice. After you have prepared it, let it “stand still” for two to three hours. It is necessary to take such a step because it is very concentrated, and its chemical composition contains volatile substances that can provoke nausea and indigestion.

Do not add salt or sugar to the vegetable juices. If the juice is very acidic, you can slightly sweeten it with honey. If the fresh juice seems too concentrated, it is better to dilute it with water.

You should not drink freshly squeezed vegetable juices with food or immediately after it. Fresh is a product with a high concentration of active substances. Reacting with food, it provokes fermentation. This can lead to bloating, heartburn, flatulence, and other unpleasant symptoms. Doctors recommend that people with low acidity drink fresh juices an hour before meals, and those whose acidity is elevated, an hour after it.

Some juices in the "pure" form are strictly not recommended. This is, first of all, beetroot fresh, which is recommended to be diluted in a ratio of 1: 3. Juices from radish, radish, garlic and onion can only be added to other fresh juices in extremely small quantities.

Do not drink juice in one gulp. Fresh should be drunk slowly, in small sips. Vegetable juices are better absorbed if they manage to mix with saliva.
Do not keep the juice in your mouth - it has a devastating effect on tooth enamel. For the same reason, it is better to use fresh juices through a plastic straw.
The dose with which to start using vegetable juices is 50 ml. Gradually, it can be increased. But starting to absorb vegetable fresh juices in liters immediately, without preliminary preparation, is still not worth it if you do not want to get an allergic reaction and digestive problems. At the same time, it is advisable to drink juices in the first half of the day, since they are energy drinks that can provoke insomnia during evening use.

How to cook fresh vegetable at home

As noted above, juices prepared at home have a greater healing potential than industrial drinks. However, to make home-made fresh juices as useful and tasty as possible, they should be cooked correctly.

  1. Choose only fresh vegetables, without external flaws or damage.
  2. Before cooking fresh rinse vegetables thoroughly in running water, if necessary, cut the peel. Please note, peeled vegetables should be washed again, under cold water and very quickly.
  3. The best option is to squeeze the vegetable juices manually or using an electric juicer with cold-pressed pressing. Juices prepared in this way preserve the whole complex of vitamins and minerals. At the same time, traditional centrifuge-type juicers, grinding fruits and vegetables, heat them, as a result of which some beneficial substances decompose. This applies not only to vitamins, but also to enzymes that strengthen the immune system.

Slimming Vegetable Juices

Every woman wants to remain graceful and slim. Today, there are many options for diets designed to help get rid of extra pounds. However, some vegetable juices also help to burn "social savings" - however, it is necessary to use them for this in very substantial quantities and strictly following the scheme.

Why do vegetable juices help you lose weight? There are several reasons.

  1. Vegetable juices have a mild laxative effect. They help the body in a natural way to get rid of the accumulated toxins and toxins, remove rotting products from the intestines. As a result, the abdomen "subsides", and the complexion improves.
  2. Fresh vegetables have a diuretic effect. They effectively remove excess fluid from the body, as a result of which you forget about edema and unaesthetic “bags” under the eyes.
  3. Many vegetable juices work as effective appetite suppressants. After drinking a glass of juice, hunger for a while disappears. You also supply your body with all the enzymes, minerals and vitamins necessary for its normal functioning.

The next aspect that should be considered: which vegetable juices are best suited for getting rid of extra pounds? There are a few of these fresh.

Celery juice. It has a weak diuretic effect, helping the body "lose" excess fluid. In addition, celery fresh normalizes metabolism, effectively reduces the level of "bad" cholesterol in the blood and increases the body's resistance due to calcium, carotene and an impressive list of vitamins in the composition. At the same time, it can be combined with other fresh juices, for example, carrot, made from asparagus or parsley. Fans of a more piquant taste can add honey or fresh orange to celery juice. It should be remembered that it is contraindicated for people suffering from increased acidity of gastric juice, thrombophlebitis, gastritis and gastrointestinal ulcers.

Beetroot juice. The active components in its composition stimulate metabolism, normalize the intestines, helping to remove toxins from the body. The beneficial effect of beet juice on the thyroid gland also allows you to normalize weight. It should not be forgotten that it can be consumed only in minimal doses, mixing with other juices. People suffering from urolithiasis, hypotension, patients who have been diagnosed with kidney disease and diabetes, it is better to completely refuse beetroot.

Cabbage juice. It effectively improves digestion, helps cleanse the body of toxins. At the same time, note that with the use of cabbage juice, cleansing enemas should be done at least every other day. The thing is that the active components of cabbage contribute to the decomposition of rot products stored in the intestine, which causes gas formation. To remove toxins, perform a cleansing procedure. However, with problems with the pancreas, it is better to refuse to use fresh cabbage. Also, with caution, it should be used for kidney diseases.

Cucumber juice is a product that effectively removes excess fluid from the body. In addition, it promotes digestion, reducing the load on the digestive tract. It also removes small stones and sand from the kidneys, helps normalize blood pressure and is a natural diuretic and laxative. And yet, with gastritis, it is better to abstain from its use.

It is noteworthy that the eggplant juice is prepared from a vegetable, which is first poured with water for two hours, then boiled for fifteen minutes and ground in a blender. It can not be used with high acidity and with enterocolitis.

How to prepare vegetable juices for the winter

Summer is a period when there are plenty of vegetables and fruits. However, it is in the winter, during the period of vitamin deficiency, colds and a decrease in immunity, we more than ever need vitamin "injections" to boost the body. Therefore, in order not to have to be content with industrial juices purchased in a supermarket, it makes sense to pre-prepare vegetable juices for the winter.

Provided that all the subtleties of the technological process are carefully observed, you can enjoy natural juices without preservatives and other chemicals throughout the year. Vegetable mixes, which are a mixture of different juices, have proven themselves best.

So, for example, you can make juice "Multi-vegetable". The ingredients you'll need are: tomatoes, bell peppers, carrots, salt and sugar. Please note that there are no clear proportions of each type of vegetable - you can experiment to your taste.

Prepare all vegetables: sort, rinse, remove overripe or wilted. Cut the raw materials into pieces that should fit easily into the neck of the juicer. Pass the vegetables through a juicer, drain the juice into a saucepan and put on low heat.

Add a teaspoon of sugar and half a tablespoon of salt. Bring the juice to a boil over low heat. Boil for five minutes. Pour juice into previously washed, dried and sterilized jars and roll up metal lids.

Turn over the jars, wrap them in a blanket and leave for a day. After that, set the cans with the lids up and up and watch for a week if fermentation occurs. If the juice does not ferment, you can put them in the pantry for long-term storage.
